Spaghetti Sauce IV - Nanu's Garlic Basil Pasta Sauce - 2005

INGREDIENTS
PREPARATION
Sauté onion and garlic in olive oil. Add remaining ingredients and simmer for about an hour, or to desired consistency

From Nani...
From Ben & Ron... We used chopped fresh basil, about 6 tablespoons. Also, 6 garlic cloves seems to be the right amount, and we added a tablespoon of sugar as well. We much prefer crushed tomatoes. - September 2014
From Ron & Joan... We used 6 cloves of garlic, crushed tomatoes and 3 Tbs. dried basil, then a 6 oz. can (from the tomato paste) of wine. After simmering, we added Nana's meatballs, simmered some more, and it came out awesome! - December 2005
- 1 large onion -- chopped
- 2 cloves minced garlic -- more if you like
- 4 - 28 oz. cans crushed or diced tomatoes
- 2 - 6 oz. cans tomato paste
- 4-6 sprigs Fresh basil - or 2-3 Tbs. dried
- Add 1 TBS Sugar
- Add 1 can wine from tomato paste can
- Use crushed tomatoes instead of diced for better consistency.
- Use 6 cloves of garlic. 2 cloves just isn't enough!
- Use 6 TBS chopped fresh basil or 3 TBS dried basil. (If you use a combination, note that if you use 3 TBS of fresh, that equals about 1½ dried, so you would want to add another 1½ dried, so adjust accordingly.)

From Nani...
- Add additional ingredients to your liking, such as mushrooms, meatballs or Italian sausage.
- Can simmer overnight or all day, especially if you add meat to the sauce, but add more water to help cook it down.
- Can use fresh tomatoes, parboiled and peeled. Nana liked to strain the seeds out, but that turned the tomatoes into mostly juice, so it had to cook down for a long time.
- Add an additional small can of tomato paste if you like a thicker sauce.
- Makes about 4-6 quart jars that you can freeze. If freezing, do not fill all the way to the top, and leave the lids loosened until frozen to avoid breaking the jars. Tighten after frozen through.
