Pork 'n Shrooms – 1998
Recipe courtesy of Kenney Webb

INGREDIENTS
  • 8 boneless pork loin chops
  • 4 cans  cream of mushroom soup
  • 3 garlic cloves -- minced
  • 1 onion -- sliced thin
  • 1 bell pepper -- chopped
  • 8 ounces  fresh mushrooms
  • ¼ cup  oil

PREPARATION
Pour oil into large skillet and heat.  Arrange 1/2 of onion slices on bottom. Add a pinch of garlic, and salt & pepper. Layer pork on top, and cover. Cook until brown and turn, about 3-4 minutes each side.

Place soup into 9x13 pan, and layer 1/2 of whole mushrooms on top. Place loins and cooked onion on top, and layer remaining onions on top of that. Next layer remaining garlic, mushrooms and bell pepper on top. Salt and pepper to taste. Cover and bake at 300 degrees for 1-1/2 to 2 hours.

Serving Idea: Serve with Potatoes 'n Shrooms!
