Spaghetti Sauce IX - Frank's 2.0 - 2024

INGREDIENTS
  • 1 medium onion -- Chopped
  • 6 Cloves  Garlic -- Smashed
  • Olive oil, about 3 tablespoons
  • 28 Ounces crushed tomatoes
  • 28 Ounces  petite diced tomatoes
  • 1 1/2 tablespoons Italian Seasoning (see note)
  • 1/2 cup red wine

PREPARATION
Heat olive oil on medium-high in a dutch oven or large saucepan. Add herbs and toast until fragrant, about a minute. Add onion and garlic and sauté until onions are translucent. Add wine and cook down about 2 to 3 minutes. Add tomatoes and herbs.  Simmer very slowly for 2 hours.

Note: Franks uses a mixture of Italian Seasoning that is 1 part Cento and 1 part McCormick's. He says the Cento adds a little too much red pepper spice.
