Pickles, Preserves & Relishes

Salsa Fresca - 2005

INGREDIENTS
  • 4          large  tomatoes (about 2 1/2 lbs.) -- seeded, roughly chop
  • 1          cup  white onions -- chopped
  • 5          teaspoons  minced garlic
  • 4          serrano peppers, minced -- stems, seeds removed
  • ¼         cup  fresh cilantro -- chopped
  • 2          tablespoons  fresh lime juice
  • ½         teaspoon  salt

PREPARATION
Combine all the ingredients and stir well to combine. Let salsa sit for 30 minutes for the flavors to blend. 

Serve as an accompaniment to tacos, or other dishes, as desired.  Use for San Diego Fish Tacos, in the Main Dishes section!
