Pizza Dough IV - Wood-fired Oven Pizza Dough - 2025

INGREDIENTS
  • 2 cups warm water - about 105°
  • 1 tablespoon dry yeast
  • 1 tablespoon salt
  • 1 tablespoon honey
  • 5-1/4 cups unbleached flour 

PREPARATION
  1. Mix water, yeast, salt and honey together until all are dissolved.
  2. Place into a large mixing bowl. Add flour. Mix at moderate speed for 8-10 minutes. Dough should be tacky but not sticky. Add more flour if needed.
  3. Place dough in a greased bowl and cover with a damp tea towel. Place in a warm area for about an hour, until doubled in size.
  4. Punch down dough and divide into 5 balls. Place on a baking tray lined with parchment paper. Cover with a damp tea towel and let rise another hour. 
NOTES: If not using immediately, you can chill the dough balls before the second rise. Then pull the dough out about an hour before using. 

Delicious dough for a wood-fired pizza oven! Crispy crust that's still chewy and delicious on the inside!
