Pizza Dough III - Val's Style - 2021

INGREDIENTS
PREPARATION
Dissolve yeast and sugar in 90° water in a small bowl. Let it stand 5 minutes, or until the mixture begins to bubble. Add flour, salt and shortening to a Kitchenaid mixer bowl. Add yeast mixture plus 70° water. Using dough hook, mix on low setting for about 2 minutes. After dough is mixed, increase speed to medium to knead the dough for about 2 1/2 minutes longer. Place dough in lightly oiled bowl and cover with a damp cloth. Let the dough proof for about two hours at room temperature.
Split dough into two parts and roll out to fit pizza pans. Spray pans generously with cooking spray. Placed rolled out dough on the pizza pans and let rise another 30 minutes or so. Top with your favorite sauce, toppings and cheese.
Bake at 450°F in the lower half of the oven for 10 to 12 minutes, or until the edges are crispy and brown.
NOTES: Makes enough dough for two 14" round pizzas. Make sure you grease the pizza pan well!
One taste and you'll swear you're in Memorial Stadium or on 35th & Holdrege in Lincoln eating a slice of Valentino's pizza!
