Pineapple Casserole - 2003

INGREDIENTS
  • 2 cans  pineapple chunks in light syrup -- drained
  • 1 ½ cups mild cheddar cheese, shredded
  • 1 ½ sticks  butter or margarine -- melted
  • 1 ½ cups  granulated sugar
  • 2 tablespoons  flour
  • 1 ½ stacks  Ritz crackers -- crushed

​​PREPARATION
Place drained pineapple in long Pyrex dish. Mix sugar, flour, and cheese together and put over pineapple. Mix melted butter and crushed Ritz crackers together and place on top. Bake at 325 for 25-30 minutes. Let it bubble around edges until crackers get golden brown. 

Be careful…it browns quickly the last few minutes.
