Orange Chicken - 2018

INGREDIENTS

CHICKEN
  • 2 pounds boneless skinless chicken thighs,
    ​cut into 1" pieces
  • 2 eggs
  • 3 teaspoons salt
  • 2 pinches black pepper
  • 1 tablespoon canola oil
  • 1 cup cornstarch
  • 1/2 cup flour
  • Oil for frying

SAUCE
  • 1 tablespoon corn starch
  • 2 tablespoons rice wine
  • 1/4 cup water
  • 1 teaspoon sesame oil
  • 3 tablespoons soy sauce
  • 10 tablespoons sugar
  • 10 tablespoons white vinegar
  • Zest of 1 orange
  • 1 tablespoon canola oil
  • 1 1/2 tablespoons ginger root minced
  • 2 teaspoons garlic minced
  • 1/2 teaspoon crushed red chili pepper

PREPARATION
Prepare orange sauce in medium bowl. Combine 1 tablespoon cornstarch, rice wine, water, sesame oil, soy sauce, sugar, white vinegar and orange zest. Set aside. 

In large bowl, add eggs, salt, pepper and 1 tablespoon oil and whisk together. In a separate bowl, add 1 cup corn starch and flour and mix well.

Heat oil in a large frying pan on medium-high (375 degrees). Dip chicken pieces in egg mixture, then dredge in the flour mixture. Fry the chicken for 3 to 4 minutes or until golden and crisp, then transfer to a cooling rack as they are cooked.

Drain oil from pan, wipe clean with a paper towel and return to stove. 
Add 1 tablespoon oil, ginger, garlic and crushed red peppers. Cook on medium-high for about 30 seconds, stirring well. Add the orange sauce and bring to boil. Reduce heat, add the cooked chicken to the pan and mix well until all pieces are coated. Simmer for several minutes (about 5-10), stirring occasionally, until the sauce thickens into a syrupy glaze.

​Serve over rice.

Ben has an addiction to Panda Express' Orange Chicken, so he decided to learn how to make it himself. He made it the first time on July 25, 2018, and there's no doubt, he'll make it many, many more times in the future. The original recipe he found was a bit odd, but he tweaked so it makes sense and came up with a masterpiece. It was amazing!
