Northern Beans - 2023

INGREDIENTS
  • 16 oz bag Northern Beans, dry
  • 1 medium onion --chopped
  • 2 stalks celery -- chopped
  • 3 carrots -- chopped
  • 3 TBS butter
  • 1 cup chopped/cubed ham -- leftover ham, lunchmeat or whatever you have on hand
  • About 8 cups chicken broth
  • Salt and pepper -- to taste

​​PREPARATION
  • Soak beans overnight.
  • Drain and rinse beans. Add to pan or crock pot.
  • Saute onion, celery and carrots in butter until nearly soft. Add to pan with beans. 
  • Add chicken broth to approximately 2” above the beans. Salt and pepper to taste
  • Bring to boil and boil for several minutes. Turn heat down to simmer and simmer throughout the day. Add more broth if needed. 
  • ​Serve with drop dumplings, cornbread or bread of your liking.

Notes from Joan: Terry says this is mostly a “throw together” meal and she adds ingredients based on looks.  I had her write down how she makes it so I could recreate it.
This was a meal made by Ginny in the Shonk home when we were growing up.  Definitely a comfort food that brings back memories!
