Pickles, Preserves & Relishes

Marinated Red Onions - 2017

INGREDIENTS
  • 1 small red onion, thinly sliced
  • 3/4 cup olive oil
  • 1 Tablespoon dried oregano
  • 1 Tablespoon red wine vinegar

PREPARATION
Placed thinly sliced onions in a low bowl. Combine other ingredients and stir until well-mixed. Pour the mixture over the onions, make sure they are submerged. Let sit on counter at room temperature to marinate for at least one hour. Keeps for two days unrefrigerated. 

Goes great on sandwiches, burgers or salads. Why leave it covered on the counter? Because when you refrigerate it, the oil solidifies, and you lose some of the oniony magic!
