Lemon Chicken - 2020

INGREDIENTS
6 boneless, skinless chicken breasts
1/2 cup corn starch
Salt and Pepper
3 tablespoons oil
2 cups chicken broth
1/3 cup lemon juice​

PREPARATION
Mix corn starch with salt and pepper. Dip chicken breast in corn starch. Heat oil in pan. Add chicken to pan and brown about 2-3 minutes each side. Set cooked chicken aside. Add chicken stock to pan and deglaze. Add lemon juice. Return chicken to pan, cover and cook 10-15 minutes.

This recipe was enjoyed on several Troop 62 campouts!
