Curried Chicken Sandwiches - 2002

INGREDIENTS
  • 8 slices  bread -- toasted
  • 1 cup  chicken -- cooked and chopped
  • ½ cup  onion -- chopped
  • ¼ cup  green pepper -- chopped
  • ½ cup  chopped salted peanuts (optional)
  • ½ cup  mayonnaise
  • 1 tablespoon  lemon juice
  • ¾ teaspoon  curry powder

PREPARATION
Spread margarine (I use spray butter) on one side of each slice toast. Mix remaining ingredients. Spread to edges of toast. Set oven to broil or 550degrees. Broil with tops about 3" from heat until hot and bubbly, about 3 minutes.

Optional ingredients:  Peanuts, apple chunks, raisins
