Chili IX, Vegetarian-style - 1998

INGREDIENTS
  • 2 cups water
  • 2 cups cooked pinto beans, or 16 oz. can
  • ½ pound  frozen tofu, thawed and squeezed dry -- 
  •     torn or cubed (squeeze in a cloth towel by twisting it)
  • 1 can diced tomatoes or tomato sauce -- (15oz can)
  • ½ cup  green pepper -- chopped
  • 1 small  onion -- chopped
  • 1 garlic clove -- crushed
  • 1 tablespoon  chili powder
  • ½ teaspoon  salt
  • ½ cup  fresh cilantro, loosely packed, chopped (optional

​​PREPARATION
Mix all ingredients in a large pan, heat and enjoy.  Mmm-mmm good... and good FOR you!

You can substitute 1 tablespoon onion powder for the onion, and 1 tsp. garlic powder for the garlic.
