Chili IX, Vegetarian-style - 1998

INGREDIENTS
PREPARATION
Mix all ingredients in a large pan, heat and enjoy. Mmm-mmm good... and good FOR you!
You can substitute 1 tablespoon onion powder for the onion, and 1 tsp. garlic powder for the garlic.
- 2 cups water
- 2 cups cooked pinto beans, or 16 oz. can
- ½ pound frozen tofu, thawed and squeezed dry --
- torn or cubed (squeeze in a cloth towel by twisting it)
- 1 can diced tomatoes or tomato sauce -- (15oz can)
- ½ cup green pepper -- chopped
- 1 small onion -- chopped
- 1 garlic clove -- crushed
- 1 tablespoon chili powder
- ½ teaspoon salt
- ½ cup fresh cilantro, loosely packed, chopped (optional
