Chicken and Dumplings - 2024

INGREDIENTS
PREPARATION
NOTE: Can use rotisserie chicken, or your own cooked chicken. (Last time I cooked I cooked up one large breast and 4 thighs.)
We like to serve ours over mashed potatoes!
- 1 10.5 oz can Cream of Celery soup
- 32oz Chicken Broth or Stock
- 1 can Pillsbury Grands Homestyle Biscuits (8 biscuits)
- 3 cups of cooked diced chicken (see note)
- Salt and Pepper to taste
PREPARATION
- Combine celery soup and chicken broth in large pot. Bring to a boil.
- While waiting for above to boil, open the biscuits and roll each biscuit out until flat and slice into squares. These will become your dumplings.
- Reduce soup/broth mixture to a simmer and add biscuits. Cover and simmer for 10 minutes or until the dumplings are puffy.
- Add chicken, salt and pepper. (I like a lot of pepper in my chicken and dumplings)
- May need to add additional broth or water depending on the preferred consistency.
- Cover, and set on low until chicken is warmed through. Enjoy.
