Bruschetta - 1996

INGREDIENTS
PREPARATION
Mix all ingredients in bowl and chill for 2 or 3 hours. Spread over toasted, sliced Rotella's hard rolls or toasted baguette slices and served with fresh grated Parmesan or Romano cheese. You can also broil briefly to melt the cheese on top.
Be careful, your guests may eat so much of this they won't have room for dinner!
- 2 tomatoes -- diced
- ½ red onion -- diced
- 3 cloves garlic -- minced
- 1/3 cup extra virgin olive oil
- ¼ cup balsamic vinegar
- 1 tablespoon chopped fresh basil
- salt and pepper -- to taste
