Baked Potatoes - 2021

PREPARATION
Notes: You may want to put foil or a cookie sheet on the rack below to catch salt and oil that may drip down. Also, if the rest of your dinner isn't ready when the potatoes are, you can just turn off the oven and leave the potatoes in until ready to serve.
This recipe Is very similar to the Outback Baked Potato... Crispy on the outside, light and fluffy on the inside!
- Russet baking potatoes
- Olive or canola oil
- Kosher salt
PREPARATION
- Wash and dry potatoes.
- Using a regular dinner fork, poke 8 to 12 deep holes all over the spud so that moisture can escape during cooking.
- Coat with canola or olive oil
- Generously sprinkle with kosher salt until all sides are covered. (The salt is what makes them fluffy)
- Bake directly on oven rack at 450 degrees for about 45 minutes until skin feels crisp but flesh beneath feels soft.
