Bacon-wrapped Barbeque Pork Tenderloin - 2019

INGREDIENTS
  • 5-6 pound pork loin 
  • Fresh cracked pepper
  • Garlic salt
  • Lemon pepper
  • BBQ sauce, Sweet Baby Ray's preferred
  • Dijon mustard, Grey Poupon preferred
  • Thick sliced bacon or pork belly

PREPARATION
Prepare pork loin 24-48 hours in advance. Cover pork loin liberally with seasonings. In a medium bowl, make mixture of BBQ sauce and mustard, about 3:1 ratio. Slather pork loin with BBQ mixture and cover with bacon, hold bacon into place with thick skewers.  Slather again.  Let marinade for 48 hours.  Cook on low heat grill until done, about 145°F. 

Slice and serve with buns to make sandwiches or as a main dish. Serve with BBQ sauce.
