Albino Burgers - 2012

INGREDIENTS
PREPARATION
Pre-Prep:
1. Lay Boneless Ribs on a baking sheet and place in freezer for 15-20 minutes, until the exterior is frozen, but not completely frozen through the center (this helps when we process the meat in a food processor).
2. In a food processor, combine boneless ribs, bacon, salt, pepper and liquid smoke
3. Pulse 15-20 times, or until meat has consistency of hamburger
4. Separate pork mixture into 4 hamburger patties, and set while you prepare the rest of the
ingredients.
5. Dice Onion and set aside.
Preparation:
1. Pre-heat oven to 375 ͦ
2. On medium heat place butter, diced onions, salt and pepper in a non-stick pan and allow them to simmer and caramelize, until the burgers are done
3. Once oven is preheated, separate buns and lay them face up on the top rack of the oven
4. We will be searing the burgers in 2 batches, then placing them in the oven to finish cooking
5. In a NON non-stick pan, heat 1 tbs of oil in pan on High heat
6. Once oil begins to smoke, add two of the pork patties for about 1.5-2 minutes per side
7. Once the first batch of burgers are cooked, repeat with the second batch
8. Remove the now toasted buns from the oven
9. Set burgers on a wire rack, and place in oven
10. When burgers have reached an internal temperature of 145 degrees, place one piece of cheese on top of burgers and allow to bake for 1-2 more minutes
Construction:
1. On the bottom of each bun spread caramelized onions, pickles and 1 tbs of Grandma Foster’s BBQ sauce
2. Place the cooked “Albino Patties” on top of the onions, then
top with more Grandma Foster’s BBQ sauce
3. Enjoy!
Try and be amazed! I invented this recipe the other night, and it is great. Once you make it, you will see why I have named it the Albino Burger.
